200 g Dates |
Stone the dates Cover them with boiling water Preheat the oven to 160C Grease and line an 8inch cake tin |
250 g Cooking apple 1 lemon |
Peel, core and chop the apple into 5mm pieces Grate the lemon Juice half of the lemon and pour the juice over the apple pieces |
50 g root ginger |
peel and chop the ginger |
200 g Butter 300 g Dark brown sugar |
Melt the butter and sugar in a large pan Allow to cool Drain the dates and chop them finely Add the dates and gigner to the butter and sugar |
2 Eggs |
Beat in the eggs Add the lemon peel |
200 g flour 2 tsp baking powder |
Mix the flour and baking powder then add to the mixture Add the apples Put into the cake tin and cook for 1 hr 15 minutes Leave it to cool in the tin |
50 g white chocolate 1 tbsp Candied lemon peel |
Melt the white chocolate in a double boiler Draw lines across the cake with it Sprinkle with finely chopped candied peel |
